Ingredients
1 lb Lean Ground Beef
3/4 cup(s) Fresh Breadcrumbs
1 can Diced Tomatoes, 8 oz
1/2 tsp. Black Pepper
1 cup(s) Pepper Jack Cheese, shredded
1/2 lb Lean Ground Pork
1/4 cup(s) Onion, finely chopped
2 tbsp. Fresh Cilantro, chopped
1/2 tsp. Salt
4 Hatch chiles, roasted, seeds removed and diced
2 clove(s) garlic, minced
1 tbsp. Taco Seasoning
1 Egg
Directions
- Preheat oven to 350° F. Lightly oil a large loaf pan; set aside. In a large bowl, add beef, pork, 3 diced chiles, breadcrumbs, onion, garlic, tomatoes, cilantro, taco seasoning, black pepper, salt and egg. Stir to combine, and shape into a ball. Press into the loaf pan.
- Cook for 1 hour and 15 minutes or until a meat thermometer inserted into the meatloaf registers 155° F. Remove the meatloaf from oven. Scatter the cheese and remaining diced chile over the top. Cook for 10 more minutes or until meat thermometer registers 160° F.
- Let cool for 10 minutes before slicing to serve.
